Yummy Food! Brown Sugar Granola!

I have been trying to cook more from scratch, what better way to leave out all the additives and preservatives in so much of the food that is in the grocery store. This is one of my family's favorite. Brown Sugar Granola....so good over yogurt :) I found this recipe on the web, wish I could remember the site to give credit, so I am sorry to who every it belongs to, and am thankful you shared it.

Brown Sugar Granola

1/2 cup butter
1 cup brown sugar
1/4 cup water
1/4 teaspoon salt
4 cups rolled oats
1/2 teaspoon cinnamon
1/2 cup dried fruit (optional) (I skip the fruit, hubby adds it in for his servings )
1/2 cup nuts or seeds (optional) (I like to add a little flax seed)

In a large 4 quart saucepan melt the butter and water together. Stir it well and let it simmer for a few minutes (2 or 3 minutes should be enough). Add the salt, oatmeal and cinnamon to the big pot. Remove the pot from the stove and stir up the granola. You want to coat the oats with the brown sugar and margarine, so keep stirring until everything is moistened. Put the onto a cookie sheet, the kind with sides. Bake it at 375° for 10 minutes. It should be a nice golden brown. Remove the pan from the oven and allow the granolagranola to cool right there in the pan. When it is cool, break it up into small pieces and transfer it to a container with lid. Add the nuts and/or dried fruit when you put it into the canister.

RESOLUTIONS.......

So can I keep them..... yet again I have many, and I hate calling them New Year's Resolutions, my husband says just set some goals and accomplish them, stop with the "I Resolve", my mom on the other hand waits until February to set her goals/ resolution, she figures by this time all the people who fall short of the January 1st goals do so about this time so she thinks she is already ahead of the crowd. Dunno?

Well its almost February & I guess I will call them goals...
* I really would like to start blogging more....I will do me good in may ways :)
* Get faster, I have been a runner for oh, more than half my life, but I lost a lot of speed when I had my kids, I would really like to get that back
* Run a marathon, I have my eyes set on one, but have a few for back up if the timing doesn't work
* Expand my garden - I have plans to add more fruit plants, I also want to freeze & can more this year
*do more sewing- after starting my full time job this past fall it has been hard, but I really have some projects I want to finish (well and a few I want to start - you can follow my sewing on Rae Designs Blog)

Check back often....Oh & tomorrow is the Blood Drive at work...to donate or not is not a question...if you can you do...someone's life depends on it

A bright AM...

Just up an getting ready for work. I am a stay at home mom (SAHM) most of the time, but I do log a few hours at our local YMCA. There are great benefits to working at the Y, 1. free baby sitting, 2. free membership, 3. discount classes for the kids, & 4. a nice little paycheck. I work in the fitness center, teaching children swim lessons and teaching first aid/CPR classes. With a degree in exercise science it couldn't be a better part time match!


Today I am working in the fitness center, & this week is pretty darn exciting. Last week we were closed for our annual maintenance & cleaning. It is also the time of year when we get new equipment and man were we spoiled this time. All of our ellipticals were replaced (9 machines), and so were all the bikes (8), we got 5 new treadmills, 2 more AMTs, a bigger stretching area & a great face lift, new carpet & paint & lighting. It looks amazing!

But hey the fun will actual come this afternoon, my son and I are going to try our second attempt at making bread, we tried earlier in the week and well though the taste was good, it was much denser than I was hoping. So I think I either added too much flour or mixed it too much, I dunno... but I fill you in on how today goes :)

A Rich Woman's Family

After the birth of my second child I realized right then and there that our family was complete. A mommy, a daddy, a son and a daughter. I was told by many I had a rich man's family (1 boy & 1 girl), but hey I am a lady so thats why this is "A Rich Woman's Family" blog. Life has been good to me, I may not have millions in dollars and that is just fine, and I definitely would never trade what I do have for any amount of money.

Through my blog you will learn about me & my family, our trials and tribulations, the fun things we do, and how we make the best with what we have been given. I love to exercise, run, sew and garden, so you will likely see posts about that stuff too. I am a frugal green loving mama so those topics are game as well. If it touches my life you will read about it.

I always believe that the best way to learn is through others, so I hope many can learn from me as I have (& continue) to learn from many other!
